Tasmania suggestions

Family of 4 heading to Tasmania for 10/12days in June/July, car hire and flying in and out of Hobart.
Any suggestions on must do’s/don’t?
We are not foodies or big drinkers.
Can we plan day to day or is it essential to pre book hotels etc?
