My son had a an affair with his fiancé married sister and she put my son's last name on babies birth certificate without his knowledge or acknowledgement of paternity he was not present for birth and no contact ever between my son and baby. Her husband has claimed her as his own and she loves and knows him as daddy which nows pays child support on her and his other kids. My son has 2 kids and the girls know each other as cousins what do we need to do to take his last name off and put her now xhusbands name as father

Get a paternity test. Prove that he either is or is not the father. Then contact birth/deaths/marriages and ask for their advice.
It will involve going to court and the courts are particular about where tests are taken. You can't take the test without the mother's consent so the test will most likely need to be court ordered.
So get legal advice as your starting point. If the child is biologically your sons he won't be able to get it removed.
If your son is the real bio father then he can sign his writes away allowing her other father to adopt her. Not sure how that is reflected on the birth certificate though.
